KimaCell® CMC FG2000 sodium carboxymethyl cellulose is a safe food additive. The cellulose derivative of carboxymethyl substituent is treated with sodium hydroxide to form alkali cellulose, and then reacts with monochloroacetic acid. The glucose unit constituting cellulose has three replaceable hydroxyl groups, so products with different displacement degrees can be obtained. On average, 1 mmol of carboxymethyl was introduced per 1 g of dry weight, which was insoluble in water and dilute acid, but could swell, and was used for ion exchange chromatography. Carboxymethyl pKa is about 4 in pure water and 3.5 in 0.5mol/L NaCl. It is a weak acidic cation exchanger, usually used for the separation of neutral and basic proteins above pH4. If more than 40% hydroxyl group is replaced by carboxymethyl group, it can be dissolved in water to form a stable colloidal solution with high viscosity. Compared with other similar products, it has the following advantages: fast dissolution speed, good solution fluidity after dissolution, uniform molecular distribution, large volume proportion, high acid resistance, high salt resistance, high transparency, less free cellulose, and less gel.

Application of CMC FG2000


KimaCell® CMC FG2000 sodium carboxymethyl cellulose in bread and pastry can control the paste viscosity and enhance the moisture retention and storage resistance of bread and pastry products. CMC is not only a good emulsion stabilizer and thickener in food application, but also has excellent freezing and melting stability, and can improve the flavor of products and extend the storage time. Pure CMC was approved by FAO and WHO for food use. It was approved after strict biological and toxicological studies and tests. The safe intake (ADI) of the international standard is 25mg/(kg · d), that is, about 1.5 g/d per person. It was reported that some people had no toxic reaction even when their intake reached 10 kg.
